Dr. Esi Quaidoo is an Assistant Professor of Nutrition and Dietetics at Adelphi University and a Registered Dietitian Nutritionist (RDN). She teaches Human Nutrition, Nutrition Assessment, and Fieldwork Experience in Acute Clinical Care, preparing future dietitians to integrate scientific evidence with compassionate, patient-centered care.
Dr. Quaidoo's research focuses on nutritional epidemiology and the biological and behavioral determinants of obesity and cardiometabolic health. Her research interests include dietary patterns, eating behavior, food reward, food noise, anhedonia, and body composition assessed using dual-energy X-ray absorptiometry (DEXA). Her work seeks to better understand how nutrition and behavior influence metabolic health and to generate evidence that informs nutrition practice and chronic disease prevention.
Nutrition is a science, but it is also deeply personal. I believe the most meaningful learning happens when students can connect scientific evidence to the real people and communities they will one day serve. My goal is to create a learning environment where students feel comfortable asking questions, thinking critically, and growing into confident, compassionate nutrition professionals.
I enjoy helping students see how the concepts they learn in the classroom apply to clinical practice, public health, and research. Whether we are discussing nutrition assessment, chronic disease, or emerging research, I hope students leave each course with not only a stronger understanding of the science but also an appreciation for the human stories behind it.
One of the greatest privileges of being an educator is watching students grow in knowledge, confidence, and professionalism over time. I am excited to be part of that journey at Adelphi University.
